I admit it; the name of this cocktail is what first got my attention. But when I started reading the list of ingredients, my eyes lit up even more. It sounded (and don’t worry, it actually is) delicious! The colours and ingredients come together to make this cocktail look somewhat inspired by nature. The addition of the thyme brings it to a whole other level.
1 ½ oz Lillet Blanc
1 ½ oz bourbon
1 oz fresh lemon juice
¼ oz simple syrup
1 dash Angostura bitters
2-3 sprigs of thyme
In a cocktail shaker with ice, combine the Lillet, bourbon, lemon juice, bitters, simple syrup, and thyme sprigs. Shake hard and double-strain (through a mesh strainer) into a Collins glass with ice. Top with soda water and garnish with a sprig of thyme.
It’s a very well-balanced drink that’s perfect for the summer and fall. The thyme really shines through and gives it an earthy flavour and appearance.
Get your friends together on a Sunday and have a round. Hopefully your schedules aren’t too busy. It’s well worth your thyme…
