There’s one particular Halloween candy I have a love/hate relationship with – the salted caramel chewy. You know which one I’m talking about, the delicious tiny caramel square that turned into a 10-minute jaw workout. I miss the flavour like mad, but I’m old now and I like cocktails and other things like having a jaw that doesn’t hurt.
Enter the Salted Carrie – a salted caramel-infused tequila sour inspired by Brian De Palma’s 1976 film adaptation of Stephen King’s supernatural blood-fest, “Carrie”. What more could you ask for in a Halloween cocktail?
2 oz hibiscus-infused Tequila Espolon
1 oz lemon juice
¾ oz salted caramel syrup
Garnish: Maraschino cherries
Add all ingredients to an ice-filled shaker and shake for 20 seconds. Strain into a coupe straight-up or into a rocks glass over ice. Garnish with maraschino cherries or a dehydrated blood orange.
To infuse your tequila, add a handful of dried hibiscus flowers to the bottle of tequila for 4 hours and then strain them out. Most grocery stores have a syrup section where you can find salted caramel.
