Duc de Pamplemouse

Another one of Bruno’s classics, this tall cocktail will probably shock you since it really shocked us, in the best way. It’s a great choice if everyone is having a beer, but you feel like having something a bit sweeter.

This one isn’t easy to describe in one word, and the ingredients list doesn’t quite give you the whole picture. As part of our recent collaboration with Le BBQ Shop, we were trying to develop something tall and fresh for their summer menu, and this was one of those lucky moments where a first brainstorm almost fell right into place. 


  • 1 ⅓ oz Aperol
  • ⅓ oz Chambord
  • ½ oz simple syrup
  • ½ oz grapefruit juice
  • ½ oz lemon juice
  • 1 egg white
  • Club soda
  • Glassware: Pilsner

Add all ingredients except the soda into a shaker without ice. Dry shake, then add ice and shake well again. Double strain into a tall pilsner glass and top with soda.

The most prominent flavour that you’ll probably notice is the grapefruit, but with a nice dose of sweetness in it to balance it out. The egg white foam, which should be substantial if you shook it enough, will make it feel like you’re drinking a grapefruit milkshake. It really is something – and it looks great too.
